Potato Candy
Ingredients:
1/4 of a potato
2 bags of powdered sugar
1 jar of peanut butter
Steps:
1) Start by heating the 4th of the potato in the microwave for about 4 minutes.
2) Once the potato is soft, peel off the skin and spash the potato with a fork about 8 times.
3) Once the potato is smashed, start stiring in small amounts of powdered sugar. The mixture should start to become a liquid and then it will start to become a solid again.
4) Keep adding sugar until the mixture turns into a dough ball
5) Then start to roll out the dough on a table that has been lightly powdered with more sugar. Try to aim for a rectangular shape.
6) Once it is rolled out (not to thin), place a layer of peanut butter across the enitre top. This can either be thick or thin depending on your prefrence.
7) Then start at the longer side and roll it up.
8) Once rolled, place it in the refridgerator over night to let it set. The next day cut it into slices and it is ready to serve.

Christmas break and I have been making it ever since. Since then my family has had the tradition of making it for Christmas, as well as for my birthday, since it is my favorite dessert. Making potato candy has become a family event. My grandma, my parents, my sister and I dedicate a whole night making it while listening to music and creating memories. My favorite memory is making potato candy on Christmas Eve of my junior year. All the Christmas lights wrapped around our tree were on with jingle bell rock playing in the background. My whole family was singing, drinking eggnog and enjoying life while we rolled out the dough for the potato candy. With potato candy being easily eaten, it makes it a great treat to set out at family events. Another reason I really enjoy potato candy is because of its unique and pleasurable taste. The yummy blend of
potato, powdered sugar and peanut butter create a delectable treat that can even be eaten with your fingers. This appetizing treat taste amazing and brings back fond memories that I will have for the rest of my life. Although my grandpa is no long here to make potato candy, I plan to carry out the tradition and teach the generations to come about this family recipe.
